Fortifikasi ferosulfat dan ferofumarat telah dilakukan ke dalam tepung terigu dan kecap. Tepung terigu dan kecap yang difortifikasi dengan zat besi disimpan masing-masing di dalam kantung plastik dan botol berwarna. Kada zat besi dan ketersediaan biologi tepung terigu ditentukan menggunakan metoda in vitro selama penyimpanan 2 bulan. Variasi kadar zat besi pada tepung terigu yang diperoleh dalam penelitian ini terjadi oleh pengadukan zat besi ke dalam tepung terigu. Selama penyimpanan kecap yang difortifikasi dengan ferosulfat, kadar zat besinya meningkat mendekati 100%, ini diakibatkan oleh adanya proses keseimbangan zat besi dalam kecap selama penyimpanan. Ketersediaan biologi besi berkisar antara 10% dan 12%. Warna dan bau tepung terigu tak berubah selama penyimpanan tersebut.
