Dalam penelitian yang dilaporkan ini telah dicoba mengukur derajat kontaminasi beras oleh kapang dengan membandingkan kadar asam lemak beras pada saat sebelum dan sesudah disimpan selama sampai 200 hari. Kadar asam lemak ditentukan secara titrasi. Didapat korelasi yang bermakna antara peningkatan kadar asam lemak dengan derajat kontaminasi beras oleh kapang.
