Bahan makanan yang dianalisa dibeli di pasar, toko, warung dan penjual keliling di daerah Bogor dan Jakarta. Beberapa contoh diperoleh dari Lembaga Pusat Penelitian Pertanian di Bogor. Dinas Pertanian Propinsi Jawa Barat juga membantu dalam pengadaan bahan contoh. Pada pembelian contoh dicatat tempat membeli, produsen, daerah konsumen, konsumen utama, frekwensi konsumsi, harga dan bobot tiap satuan, dan sifat-sifat organoleptik. Analisa dilakukan terhadap bahan makanan mentah, terolah dan masak. Bahan makanan terolah dan masak dibeli, atau diolah dan dimasak di laboratorium. Metode analisa yang digunakan ialah metode American Official Agricultural Chemists (1975), kecuali untuk beberapa zat gizi digunakan cara lain.
